The tide writes the menu each morning. At dusk we stage it — one counter, two seatings, five courses that arrive like scenes.

    A single oyster on crushed ice with a pale mignonette pearl

    The cold open

    Oyster, mignonette pearl

    Raw from the morning boat, dressed in a frozen sphere of shallot and green apple that melts as it meets the shell.

    A langoustine course glossed with bisque foam and a gold accent

    The rise

    Langoustine, its own bisque

    Barely warmed, laid over a foam drawn from the shells, finished with a breath of brown butter and gold.

    Poured at the counter — a saffron shellfish tide rising around the fish until the plate is a small warm sea.

    The fire

    Wagyu, over the coals

    The one act that leaves the sea. Grilled on open embers, rested in its own dark jus, a single allium burnt sweet.

    The lights come down. Bitter chocolate, caramel taken to the edge of smoke, a single leaf of gold for the bow.

The room

Sixteen seats, one fire.

No tables. A single blackened-oak counter wraps the open kitchen, so the pass is the stage and every guest sits in the front row. One service a night — we cook for the room, not the ticket.

The pairing

A glass for every act.

Our sommelier reads the night's cast, then pulls a flight to answer it — mineral whites for the cold acts, a single dark red for the fire, a sweet close for the curtain. Or stay with water and let the tide speak for itself.
